Healthy Habits: How to Make a Watermelon Cooler

Did you know that each bite of watermelon contains 92% water? Yes, the remaining 6 percent is sugar, but it’s the good-for-you, all-natural kind. In other words, the quintessential summer fruit is one of the healthiest things you can eat. This Memorial Day weekend, make it one of the healthiest things you drink, too. Mixed with coconut water and lemon juice, this electrolyte-packed beverage is the perfect antidote to a hot day, especially if you’re staying active. Plus, it makes an unexpected mixer should you choose to add a little vodka or gin at cocktail hour! INGREDIENTS
3 tbsp. coconut palm sugar
1/2 cup boiling water
2 lemons, juiced
1 medium-sized watermelon
2 cups club soda
Ice
Half cup mint leaves

Cut watermelon into cubes and purée all but a softball-sized amount at a high speed until liquefied. Set aside. Combine boiling water and coconut palm sugar; stir until dissolved. Add lemon juice and melon juice. Stir well, and refrigerate for several hours or overnight. When ready to serve, create watermelon balls with leftover watermelon and a scoop. Rim the edge of a tall glass with sugar and fill with ice and a splash of club soda. Top with cooler, garnish with a watermelon ball, lime wedge, and mint leaf.
