3 tbsp. coconut palm sugar
1/2 cup boiling water
2 lemons, juiced
1 medium-sized watermelon
2 cups club soda
Half cup mint leaves
Cut watermelon into cubes and purée all but a softball-sized amount at a high speed until liquefied. Set aside. Combine boiling water and coconut palm sugar; stir until dissolved. Add lemon juice and melon juice. Stir well, and refrigerate for several hours or overnight. When ready to serve, create watermelon balls with leftover watermelon and a scoop. Rim the edge of a tall glass with sugar and fill with ice and a splash of club soda. Top with cooler, garnish with a watermelon ball, lime wedge, and mint leaf.
