Healthy Habits: The Most Incredible Bread Recipe Ever

If bread hasn’t been on your plate since the Atkins Diet craze of 2004, then prepare to celebrate: We recently found the most incredible recipe for a vegan and gluten-free bread on My New Roots, the blog of holistic nutritionist Sarah Britton. And since seeing isn’t always believing, we had to make it ourselves! So simple and incredibly delicious! Life-Changing Loaf of Bread

1 cup sunflower seeds
1/2 cup flax seeds
1/2 cup hazelnuts or almonds
1 1/2 cups rolled oats
2 Tbsp. chia seeds
4 Tbsp. psyllium seed husks (3 Tbsp. if using psyllium husk powder)
1 tsp. fine grain sea salt
1 Tbsp. maple syrup
3 Tbsp. melted coconut oil or ghee
1 1/2 cups water

Combine all dry ingredients in a loaf pan, stirring well. Whisk maple syrup, oil and water together in a measuring cup. Add to dry ingredients and mix well until everything is completely soaked and dough becomes very thick. Smooth out top of dough with the back of a spoon and let it sit on counter top for at least 2 hours or up to 12 hours. Dough will retain its shape when it is ready to be baked.
Preheat oven to 350 degrees Fahrenheit.
Bake loaf on middle oven rack for 20 minutes. Remove from loaf pan, place upside down directly on rack, and bake for another 30 to 40 minutes. Bread will be done when it sounds hollow when tapped. Let it cool completely before slicing.
Store in an airtight container for up to 5 days. Bread also freezes well, but remember to slice before freezing.
